Scotch Teas Makes 1 1/2 dozen squares 1/2 c. butter 1 c. light brown sugar 2 c. rolled oats 1/2 t. salt 1 t. baking powder Preheat oven to 300 F. Melt butter; add sugar and stir until dissolved. Stir in remaining ingredients. Bake in wax paper-lined 8-inch square pan about 20 minutes. Allow to cool; cut into squares. Aunt Jan's Scotch Teas [These additions do not affect baking instructions.] *ADD: 1 level T. Black-strap Molasses (unsulphured) *ADD: 1 level tsp. instant Lipton tea pwd. (dry) *ADD: Sprinkle on top ½ c. finely chopped raw pecans or other favorite nuts Oatmeal Date Bars Makes 20 bars 1/2 c. butter 1 c. brown sugar 1 1/2 c. flour 1/2 t. salt 1 t. soda 1 3/4 c. quick-cooking oatmeal 1 lb. pitted dates 1 c. sugar 1 c. water Preheat oven to 350 F. Thoroughly cream butter and sugar; add sifted dry ingredients and oatmeal. Mix until crumbly. Line a 9x13 inch pan with wax paper; press 1/2 crumb mixture into pan. Spread with date filling (cook 1 lb. pitted dates, chopped, with sugar and water until the consistency of jam). Cover with remaining crumbs and pat smooth. Bake for 30 minutes.
