Bar Cookie Recipes

My cousin Cynthia said, "Grandfather used to stand in the kitchen about 10 or 11 at night… and scarf down several Scotch Tea squares with milk… then when he was detected, his face got red, he smiled, and he said, 'These are really terrible.' Then he ate a bunch more."

Here is that addictive recipe, and a few more from Grammy's collection.

Scotch Teas

Makes 1 1/2 dozen squares

1/2 c. butter

1 c. light brown sugar

2 c. rolled oats

1/2 t. salt

1 t. baking powder

Preheat oven to 300 F. Melt butter; add sugar and stir until dissolved. Stir in remaining ingredients. Bake in wax paper-lined 8-inch square pan about 20 minutes. Allow to cool; cut into squares.

Aunt Jan's Scotch Teas

[These additions do not affect baking instructions.]

*ADD: 1 level T. Black-strap Molasses (unsulphured)

*ADD: 1 level tsp. instant Lipton tea pwd. (dry)

*ADD: Sprinkle on top ˝ c. finely chopped raw pecans or other favorite nuts

Oatmeal Date Bars

Makes 20 bars

1/2 c. butter

1 c. brown sugar

1 1/2 c. flour

1/2 t. salt

1 t. soda

1 3/4 c. quick-cooking oatmeal

1 lb. pitted dates

1 c. sugar

1 c. water

Preheat oven to 350 F. Thoroughly cream butter and sugar; add sifted dry ingredients and oatmeal. Mix until crumbly. Line a 9x13 inch pan with wax paper; press 1/2 crumb mixture into pan. Spread with date filling (cook 1 lb. pitted dates, chopped, with sugar and water until the consistency of jam). Cover with remaining crumbs and pat smooth. Bake for 30 minutes. Cut into bars or squares.
