Easy Bean Salad Recipe that's Full of Flavor
Vicky Hancock's Bean Salad Recipe
Very authentic Italian appetizer salad. 1/2 C fresh parsley leaves chopped 1/2 C. red onion chopped 1/4 C- 1/2 C. olive oil with 2 cloves of garlic crushed 2T red wine vinegar 1`T. lemon juice (place over white beans, 1-2 cans) Good over salad also (or over gorgonzola, as appetizer without the beans added) Best combine with drained white beans. Can use up to 3 cans of drained rinsed, beans, (can extend this recipe if needed). I once used white beans (cannoli,) and added a can of large butter beans... Served to my ladies group in Italy as we made it go farther!
