Butterscotch Cookies No, there aren't actually any butterscotch chips in this recipe. This one was developed decades ago. Originally, the term "butterscotch" was used to describe the combination of butter and brown sugar. You won't be disappointed with this old recipe! Makes 3 dozen squares 1/2 c. butter 2 c. brown sugar 2 eggs 1 t. vanilla extract 2 c. flour 1/4 t. salt 2 t. baking powder 1 c. toasted, shredded coconut 1 c. chopped nuts (optional) Preheat oven to 350 F. Cook butter and sugar over low heat until bubbly. Cool. Beat in eggs, one at a time. Add vanilla; add sifted dry ingredients and coconut and mix thoroughly. If choosing to add nuts, mix them in.
