Candied Yams Recipe

serves 6

4 lbs. yams or sweet potatoes, washed and pricked with a fork

1 stick butter

1 c. brown sugar, or to taste

optional: mini marshmallows, pecan pieces, crushed pineapple

Preheat oven to 350 degrees. Line a baking sheet with foil and arrange potatoes on sheet. Roast potatoes for 40 minutes to 1 hour depending on their size, until tender. Set aside until cool enough to handle; peel. Either mash or chop, then place in large baking dish. If you want to add crushed pineapple, stir it in. Melt butter and pour over yams evenly. If adding nuts, sprinkle over. Sprinkle with brown sugar to taste. Cover with even layer of mini marshmallows, if using. Bake at 350 F. approx 30 minutes, until marshmallows are golden brown.
