A Simple and Delicious Carrot Cake Recipe
This is a delicious carrot cake with pineapple, and cream cheese frosting.
Carrot Cake Recipe serves 12 2 c. flour 2 t. baking soda 1 t. baking powder 1 t. salt 1 1/2 t. cinnamon 3/4 t. nutmeg 1 c. white sugar 3/4 c. brown sugar 1 c. oil 3 eggs, beaten 1 t. vanilla 2 c. grated carrots 1 c. shredded coconut 1 c. chopped pecans 1 can (8 oz.) crushed pineapple, drained 2 handfuls raisins Heat oven to 350 F. Mix first eight ingredients; beat in oil, eggs and vanilla. Stir in remaining ingredients. Pour into two greased 9-inch pans and bake 35-40 minutes. Allow to cool; frost with
cream cheese frosting
