These Champagne Cocktail Recipes Will Become Party Standards

Champagne Cocktail

serves 6

750 ml champagne

1 1/2 t. Agostura bitters

6 sugar cubes

Place one sugar cube in the bottom of each of six flute glasses; add a few drops Angostura; top with champagne. Serve immediately.

Cocktail Choice II

serves 6

750 ml champagne

80 ml Framboise, Chambord, or Creme de Cassis liqueur

6 sugar cubes (optional)

Add 2 t. liqueur to each of six flute glasses; pour in champagne. Add sugar cube if desired.

Lava Lamps

serves 6

1 package (3 oz.) Jello

1 cup boiling water

1 cup vodka

1 (750 milliliter) bottle champagne

Dissolve the Jello in the boiling water; allow to cool slightly. Add the vodka, and pour into a dish (small baking dish works). Chill two hours, or until set. Break up the gelatin with a fork into very small pieces, and place 1-2 T. in each champagne glass. Pour champagne over and give a little stir.

Vanilla Champagne Cocktail

For another great tasting and simple drink, just fill each flute with bubbly and add a vanilla bean.

Champagne with Lemon Sorbet and Strawberries

8 servings

3 pints strawberries

1/3 c. plus 1/4 c. sugar

3 pints lemon sorbet

750 ml chilled Champagne

Clean and hull berries. Puree half the berries with 1/3 c. sugar. Transfer to a bowl and chill at least one hour. Place half of this berry puree and half of the lemon sorbet in food processor. Blend while slowly adding 3/4 c. Champagne. Mixture will be thick and slushy. Transfer to medium bowl. Repeat with remaining puree and sorbet. Freeze at least two hours. Use a Champagne stopper on the bottle and refrigerate. Cut the remaining berries in quarters, mix with 1/4 c. sugar and chill one to two hours.Spoon sorbet mixture into 8 parfait glasses. Top with remaining Champagne and sugared strawberries.
