Quick and Flavorful Chicken Florentine
Vicky Hancock's Chicken Florentine
10 oz. spinach 2 whole chicken breasts-boneless- halved 1/3 C dry bread crumbs 1/4 t. basil leaves 2 T.oil 2 oz. (1/2C) mozzarella Cook spinach. Flatten breasts to 1/4 inch by pounding. In small bowl, combine crumbs and basil. Coat chicken with crumbs pressing firm. Heat oil in large skillet. Brown each side, spoon spinach onto chicken and sprinkle cheese over. Cover and cook low heat til cheese melts. serves 4
