Homemade Chocolate Pudding Recipe

Serves 4-6

Use either dark or milk chocolate for this easy pudding.

2 T. sugar

2 T. cornstarch

2 T. unsweetened cocoa powder

pinch salt

1 1/2 c. milk (whole, not lowfat)

1/2 c. heavy whipping cream

4 oz. good quality dark or milk chocolate

1 t. pure vanilla extract

if desired: additional heavy whipping cream, whipped, for topping

Whisk first four ingredients together in heavy saucepan; whisk in milk and cream. Turn heat on medium-high and bring to a boil, stirring constantly. Boil and whisk for 2 minutes. Remove from heat; whisk in chocolate and vanilla until blended and smooth (mixture will be thick). Transfer to a bowl, cover with wax paper, and chill at least 2 hours until cold. Top with sweetened or flavored whipped cream, if desired.
