For these cupcake recipes, you will alternately add dry and wet ingredients to the batter... meaning add some dry, some wet, back and forth; mix just until flour disappears.
Grease cupcake pans or use paper liners.
Ovens vary, so always check for doneness. A toothpick inserted in the center should come out clean.
Place pans near center of oven; do not allow pans to touch eachother or the sides of the oven. Don't place one pan directly over another; stagger pans on two shelves.
Peanut Butter Cupcakes
makes 24
1/3 c. butter
1 1/2 c. brown sugar, divided
1/2 c. peanut butter
2 eggs
2 c. flour
1/2 t. salt
2 1/2 t. baking powder
3/4 c. milk
1 t. pure vanilla extract
Preheat oven to 350 F. Cream butter and 1 c. sugar; add peanut butter; mix well. In separate bowl, beat eggs with remaining 1/2 c. sugar and add to batter; mix well. Add sifted dry ingredients alternately with milk and vanilla extract. Fill cupcake pans half full. Bake approx. 25 minutes.
Chocolate Cupcake Recipe
makes 1 1/2 dozen
1/2 c. boiling water
1/4 c. butter
1 c. sugar
1/4 c. unsweetened cocoa
1 1/2 c. flour
1/2 t. salt
1/2 t. baking powder
1/2 t. baking soda
1 egg, beaten
1/2 c. sour cream
1/2 t. vanilla extract
Preheat oven to 350 F. Add water to butter, sugar and cocoa; beat until sugar dissolves. Sift together dry ingredients. Combine egg, sour cream and vanilla extract. Add sifted dry ingredients to butter mixture alternately with egg/sour cream mixture. Fill cupcake pans half full; bake approx. 25 minutes.
Banana Cupcakes
Makes 2 1/2 dozen
1/2 c. butter
1 1/2 c. sugar
2 beaten eggs
2 c. flour
1/2 t. salt
1 t. baking powder
3/4 t. baking soda
1/4 c. buttermilk
1 c. mashed until smooth banana
1 t. vanilla extract
Preheat oven to 375 F. Cream butter and sugar; add eggs and mix well. Combine buttermilk, banana and vanilla; add alternately with sifted dry ingredients. Fill cupcake pans half full and bake for approx. 20 minutes.
Other variations:
With experimentation, cupcake recipes can be made out of any cake. Mix up your favorite cake batter and fill cupcake pans 1/2 to 2/3 full; try baking at 350 F. for 15 minutes, to start. Always test for doneness.
