Old -Fashioned Fruitcake Recipes People Will Actually Like!

These fruitcake recipes are out of Grammy's very old cookbook.

Mommy Hancock's Fruitcake Recipe

The following is exactly as was written seventy years ago. Grammy copied it from her brother-in-law's mother. Note: "soda" is baking soda. A "slow" oven is 250-275 degrees. You can try it with butter instead of shortening, or get trans fat free shortening.

"Cream together 2 c. brown sugar and 3/4 c. shortening

Add 2 unbeaten eggs

Add 2 cups applesauce

1 tsp. each vanilla, lemon, and orange flavoring

1 scant tsp. soda

1 scant tsp. salt

3 tsp. baking powder

4 cups flour

1 tsp. cinnamon, and scant tsp. nutmeg

1 c. broken nut meats

1 c. cut-up dates

4 oz. mixed candied fruit

1 1/2 c. raisins soaked in hot water

If dough is too stiff, add orange juice. Bake very slowly in well-greased pans. Makes one large cake and one small."

White Fruit Cake

1 c. shortening

1 c. sugar

5 eggs

2 c. flour

1 t. salt

1 1/2 t. baking powder

1/4 c. unsweetened pineapple juice

1/4 pound (4 oz.) citron, finely cut

1/4 pound each orange peel and lemon peel, finely cut

1/2 c. chopped candied cherries

1 1/4 c. chopped candied pineapple

1/2 c. chopped dates

1/2 c. chopped dried apricots

1/2 c. chopped figs

1/2 pound (8 oz) white raisins

1/2 pound moist, shredded coconut

2 c. sliced almonds

Thoroughly cream shortening (or butter) and sugar; add eggs, one at a time, beating well after each addition. Reserve 1/2 c. flour for fruits; add remaining flour sifted with salt and baking powder alternately with pineapple juice. Flour fruits with reserved 1/2 c. flour and add along with coconut and nut meats; stir only until well blended. Pour into wax paper lined 3 1/2 inch by 7 1/2 inch loaf pans. Bake in a slow oven (275 F.) 1 1/2 hours. Decorate with candied pineapple, almonds, cherries, or citron and continue baking 1 hour.
