These Hamburger Recipes Will Make You the King or Queen of the Grill
Oh, yeah! You know you want to impress your guests with these hamburger recipes. We're talking steakhouse burgers made by you, at your house. Great flavor, moist inside, charred outside, fantastic toppings.
The Best Hamburger of All Hamburger Recipes Serves 4 Note: You want ground beef that is 85-90% lean for this recipe, due to the addition of bacon fat to the mix (you don't want slightly greasy burgers). Use the bacon slices as a topping. Ingredients: 8 strips good-quality bacon 1-2 slices white bread, crusts removed, cut into 1/2 inch pieces (about 1 c.) 1/4 c. milk 1 1/2 lbs. ground beef 1 t. salt 1/2 t. pepper 2 large garlic cloves, finely minced
Directions: Fry bacon over medium heat until crisp. Transfer to paper towels to drain. Spoon 3 T. bacon fat from pan into heatproof bowl and place in refrigerator. Pour milk over bread in small bowl and let sit for five minutes, then mash with fork into smooth paste. In mixing bowl, break up ground beef into small pieces. Add salt, pepper, garlic, bread paste, and reserved bacon fat. Knead together until thoroughly mixed. Divide into 4 portions, and form each into a 3/4 inch thick patty. Oil grate and grill over very hot fire until well seared on both sides, 7-10 minutes. Do not press down on patties... you want the juices to stay inside. Serve with desired toppings.

Sharp cheddar, Havarti, Swiss, or pepper jack cheese, sauteed mushrooms, sliced pickled jalapenos, tomato slices (I mean good tomatoes, not the pale tasteless kind... and please don't refrigerate your tomatoes, it makes them mushy), lettuce, Dijon, brown, or good old yellow mustard, sliced dill pickles, sweet relish, fried onion rings, your favorite bbq sauce, or...
My grandfather used to add lots of pepper and Worcestershire to his burgers and the whole family loved them that way. Or...
The Sauce 1 1/4 c. ketchup 1/2 c. water 1/4 c. brown sugar 2 T. Worcestershire sauce 1/2 t. dry mustard
Place all ingredients in saucepan and whisk over medium heat until warm.
Caramelized Onions Thinly slice 3 large sweet onions. Melt 2 T. butter and 1 T. olive oil over medium heat; add the onion slices and sprinkle with 2 t. brown sugar and 1/2 t. salt. Cook, stirring often, approx. 20 minutes until onions become caramelized and soft.
Guacamole 6 ripe avocados 2 garlic cloves, minced 1 fresh lime, juiced 1 small to medium tomato, diced 1/2 onion, diced salt and pepper to taste chopped cilantro (optional)
Peel and mash avocados. Add the rest of the ingredients and mix well. Make your guacamole as chunky or smooth as you like it.
