Hollandaise Sauce Recipe
makes 1 cup 1/2 c. butter 2 egg yolks 1/4 t. salt dash cayenne 1 1/2 T. lemon juice Divide butter into thirds. Place 1/3 of the butter and the egg yolks in the top of a double boiler and stir constantly. When butter melts, add another 1/3 portion. When that melts, add the last 1/3 portion of butter. Stir constantly until thick; remove from heat. Stir in remaining ingredients. This sauce is delicious served over vegetables, or eggs benedict. Also great with seafood.
