Mashed Potatoes Recipeserves 6 4 pounds potatoes (preferably Yukon Gold), peeled and cut into quarters 2 T. salt 2 cups heavy cream 3 tablespoons butter optional additions: stir in chopped chives or green onions, or roasted garlic, and/or grated cheese salt and freshly ground pepper, to taste Put the potatoes into a large pot, add 2 T. salt, and cover with cold water. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. Drain. Meanwhile, heat the cream and butter in a small saucepan. Mash the potatoes or put through a ricer or food mill into a bowl. Add the hot cream and butter. Add any stir-ins you choose, and season with salt and pepper to taste.
