Great Sponge Cake Recipe

Sponge Cake Recipe

4 egg yolks

1 1/2 c. sugar

1/2 c. boiling water

1 1/2 c. cake flour

1/4 t. salt

1 t. baking powder

1 t. lemon or vanilla extract

4 egg whites, beaten to stiff peaks

Preheat oven to 325 F. Beat egg yolks until very thick, gradually add sugar and continue beating. Add water; mix well. Add sifted dry ingredients; mix until smooth and add extract. Gently fold in egg whites. Bake in ungreased 10-inch tube pan for approx. one hour (ovens vary). Invert pan to cool. Can be split, filled, and frosted.

Note: This is a very old recipe calling for the use of a 10-inch angel-cake pan (tube pan). It makes enough batter for two 9-inch round cake pans but you will have to experiment with baking time, and may have to increase temp to 350 degrees.

Cake is done when it springs back to the touch.
