Cheese Stuffed Tomatoes Are a Great Finger Food Recipe

Cheese Stuffed TomatoesServes 6 1 pint cherry tomatoes, washed 1 lg. avocado, peeled and mashed 4 t. fresh lemon juice 1-2 T. chopped scallion (to taste) 1 small clove garlic, minced 4 oz. feta or goat cheese chopped fresh parsley for garnish Cut tops off tomatoes, seed, and place upside down on paper towels to drain. Mash together the rest of the ingredients, except parsley, until mixed well and stuff tomatoes. Garnish with chopped parsley. You can replace the avocado with softened cream cheese. Filling can be prepared in advance. Hint: Don't prepare tomatoes too far in advance. Refrigerating tomatoes makes them mushy.
